Biga Balls have only 6 ingredients and no artificial flavours or preservatives:

Wheat flour, fresh yeast, water, sea salt,diastatic malt powder and olive oil. The dough is hand-mixed, fermented, kneaded and hand-balled before being flash-frozen at -32c to lock in all the flavour.

FREQUENTLY ASKED QUESTIONS

How long will the Biga Balls Keep for?

There is an expiry date on the box. Thawed dough balls should be used within 6 hours or you can store them in the fridge for up to 48 hours. However, I would recommend to cook the pizza within the first 6 hours after thawing.

Can I use a regular oven for cooking pizza?

Yes, of course. You can cook the Biga pizzas in a conventional oven, in a cast iron pan, a frying pan or a ceramic pizza stone. Make sure to pre-heat the oven and the pizza stone / pan prior to cooking. During the pizza cooking, use the broiler / grill setting so the heat comes from the top for better results.

How long before cooking should I defrost the dough

In room temperature, it takes about 4 hours for the dough ball to thaw.

Can I keep unused dough.

Yes of course! Simply take out as many dough balls you plan to use and place any you don't use in a Ziploc bag and back in the freezer before they thaw. If you have thawed the dough balls, you can store them in the fridge in a sealed container for up to 48 hours, but you should not re-freeze them.

Where do you deliver?

At the moment Biga Balls are only available in Hong Kong.

Note: We cannot deliver to Lamma, Cheung Chau, or Peng Chau islands.

Customers living in Mui Wo or Discovery Bay can order the Biga Balls with pick up from SF Express cold storage in Tung Chung.

How do I make sure my pizza does not stick on surfaces

Make sure to use enough flour when preparing the dough. I recommend to use semola rimacinata flour when making pizza.
